Beetroot, beetroot, beetroot, love it. In fact I even liked it when it was drowned in vinegar and bled onto the slippery ham slices that were part of the traditional Irish salad of yore (floppy lettuce, slippery ham slices – rolled if we were being posh – sliced boiled egg, tomato halved, scallions, those pickled beetroot slices, warm waxy potatoes and salad cream).
