I was delighted to receive a copy of Niamh Shields’ new cookbook “Comfort & Spice”. I know Niamh personally but knew her well before meeting her as leading food blogger eatlikeagirl. Her new cookbook captures her personality and warmth perfectly and the recipes come with the tips and witty writing we’ve all come to expect from her blog. But would they stand up to the test in the kitchen? What do you think!

When I lived in Ireland yoghurt was generally thin and sugary and quite unpleasant. It wasn’t until I had travelled to France, Belgium and Germany that I first had lovely sour yoghurt. Combining it with stewed fruit or fresh honey opened my tastebuds. For a very long time one could only dream of decent yoghurt in Ireland. In recent years Glenilen Farm has led the way out of the yoghurt wilderness and expanded into other fabulous dairy products. Here I catch up with co-owner, Valerie Kingston, as she talks about how the company she and her husband, Alan, was started and how it developed.

Some dishes deliver taste and comfort no matter if it’s rain or shine. And boy, did I need some comfort after a stressful week or so. This plain looking (some might say bland!) dish is one whose looks belie a warm heart. Need a hug on a plate then read on.
