Post image for Introducing… Birgitta Curtin, Burren Smokehouse

Just in time for annual trade show Speciality Fine Food Fair 2011 which starts this Sunday 4th September in London I’m introducing a couple of irish food producers I hope you’ll find interesting. I’ve taken this opportunity to ask them some questions about their business so you can find out more about them before your visit to SFFF2011. These are some of my personal favourites and hopefully you’ll get a chance to see why.

Foraging on the Common: Bramble Cobbler

Post image for Foraging on the Common: Bramble Cobbler

Everything is a couple of weeks early this year in the garden and it’s no exception in our neighbouring Common. We went foraging today and a short 20 minutes later we had gathered enough fruit for a quick cobbler (plus some sloes I’ll make into some sloe gin!). We plan to go back and forage properly but today’s short outing meant we had a lovely pud to round up our Sunday with.

This fresh and fruity chilled summer soup is perfect at the end of a meal. The bright soup hides a smooth almond milk and is bound to be a talking point at the table. In a good way!

Post image for Shacklewell Nights at Restaurants In Residence

Shacklewell Nights has already made a name as a ‘go-to’ London supperclub. An invitation to one of their Restaurants In Residence evenings at Create 2011 meant I could at last experience Clare & Jonathan’s cooking. And they didn’t disappoint. Just a quick look at this Summer Berry Meringue and you know that the menu was a pleaser. It certainly was!

Scandilicious is truely delicious

“I love it when a plan comes together” to quote a well-known action team. A gift of Forman & Field smoked salmon coincided with a delivery of Signe Johansen’s new cookbook, ‘Scandlicious: Secrets of Scandinavian Cooking’. So a flick of the pages and I’d decided on two recipes that would produce a fine meal. Yes, it was that easy!
