I’m not a huge dessert fan but I do like trifle and I do like chocolate and I quite fancied having an easy alternative to Christmas Pudding for Christmas Dinner. This chocolate, boozy trifle (can there be any other sort?) was a hit on the day and was even better a day or so after! It’s one I’ll be making again for sure.

Personally I can never understand why some folk dread the Christmas leftovers. Surely that’s why we buy all those glorious chutneys, relishes and mustards all year, just to liven up some lovely cold meats. However, you can also incorporate the leftovers into some great titbits for the festive season. For a few suggestions, read on.

I was lucky to come across some fresh brown shrimp at the market and devised these dishes to allow them to shine and delight. Simple salads that brightened up a dark November evening. It was a really good combination of flavours, even if I say so myself!
